Coober Pedy, in the South Australian outback, is a town of only a few thousand people, and roughly half of them dig their homes straight into the sandstone hillsides to escape summer heat that regularly passes 40°C — it's also where most of the world's opal comes from. That's arrangeable. So is a Barossa Valley winegrower tending vines that are among the oldest continuously producing in the world, having escaped the disease that wiped out most of Europe's original vineyards in the 1800s.
